My Perfect Guacamole


I’ve always liked to cook for my family, but I haven’t had a chance to really work on my own recipes or adapting family recipes that I’ve made over the years to my own. Now that we are here in Belgium and eating out is both time-consuming and cost-prohibitive for a family, we’ve been  eating all our dinners at home and I’ve been working on my recipes.

A family favorite is Mexican food and since the Mexican holiday, Cinco de Mayo is coming up, I thought I’d share my Perfect Guacamole. We’ve all been craving a good Mexican meal and that is truly impossible to find here, so I’ve learned to make some of our favorites.

Perfect Guacamole

Depending on how many people I’m serving, I adjust the quantities, but for our family of six, this is just the right amount.

2 ripe avocadoes, peeled and mashed

2-3 Tbsp. fresh cilantro, finely chopped

1 small tomato, diced

1 small red onion, finely chopped

1 lime, juiced

sea salt, to taste

I like to place all the ingredients in a food processor and give it a few quick pulses until it is mixed well. There should be some chunks of the ingredients. Do NOT puree it.

I serve it with blue corn tortilla chips and a delicious margarita made by hubs.
